Before the must can be obtained and fermented, the grapes are gently crushed and then clarified. Fermentation occurs in temperature-controlled, stainless steel tanks. Once the must reaches between 3% and 4% alcohol, it is chilled; this process preserves the wine's natural aromatic characteristics. The wine is given its sparkling element following the traditional Charmat method.
